On August 27, 2011 I made a notation in my little spiral notebook, the one that I write recipes in , it said:

Need to make again for photos.

As you probably have guessed, it was for a Sundried Tomato and Bacon dressing. It was one of those recipe that I threw together and it came out perfect, no tweaking needed. I quickly wrote down the ingredients so I wouldnt forget and then made myself that little note. I even put a little sticky flag on the page to remind me to remake it and take photos. I stashed the notebook away, then promptly forgot about it until I received the Bella Sun Luci Sun Dried Tomatoes.

I served this on heals of the Roasted Garlic Sun Dried Tomato Soup with Grilled Truffle Cheese Croutons, which led to my choice of using the same product that I used in the soup. Ill not go on and on about how good the tomatoes were since I already shared that with you. But I will tell that the dressing flavorful, I could almost eat it straight up. For the salad I simply used some romaine lettuce and feta cheese and felt like I had a complete luncheon dish because the sun dried tomato and bacon dressing was hearty enough on its own. A chunk of the Simple Artisan Bread that Ive been making rounded out the meal.

  • 1/4 cup crumbled crispy bacon
  • 2 tablespoons small diced Bella Sun Luci Sun Dried Tomatoes with Italian Herbs
  • 2/3 cup lemon olive oil or extra virgin olive oil
  • 1/3 cup red wine vinegar
  • 1 garlic clove, finely minced
  • Makes about 1 1/4 cup
  • Tips For Making The Best Sun

    • Dry tomatoes vs. jarred in oil. I prefer the flavor of sun-dried tomatoes that are sold dry versus those packed in oil. If you choose to use oil-packed ones, be sure to drain them well before adding to the blender.
    • Reconstitute . If your sun-dried tomatoes are on the older side and you suspect theyre too dry to blend into the dressing, reconstitute them by soaking them in warm water for ~10 minutes before adding to the blender.
    • Use the good olive oil. Since the ingredient list for this dressing is so short, be sure to use the best quality ingredients you have access to. The olive oil, in particular, will determine the overall quality of the dressing. I recommend California Olive Ranch.
    • Add oil at the end. If it gets blended for too long, olive oil can sometimes take on an unpleasant bitter flavor. To avoid over-processing, add it to the blender at the very end after all the other ingredients are pureed.

    Variations On Mediterranean Salad

    You may have noticed that this Mediterranean cucumber salad doesnt contain any lettuce. Since I worked at an authentic Greek restaurant during early college, I learned from the Santorini native owner that there is no lettuce in a true Greek chopped salad. What a surprise, considering almost every restaurant Greek salad in the United States has lettuce!

    So I decided to go the authentic route with this tomato and cucumber salad recipe and skip the lettuce.

    That being said, there are a couple variations I love making:

    • Lettuce is a fine addition to this Greek cucumber salad. This will help stretch the salad and add more bulk to it, and also reduce the amount of carbs per serving if thats important to you.
    • Add some kalamata olives or pepperoncinis for some additional flavors. This is one of the many reasons I love salad, they are so easy to customize and switch up according to preferences and what you have in the fridge!

    Three: How To Make A Thicker Vinaigrette Dressing

    For a thicker sun-dried tomato dressing thats not just oil and vinegar, there are two ways to incorporate a few sun-dried tomatoes:

  • For a thin dressing with pieces of sun-dried tomato: add a few pieces of sun-dried tomatoes to a blender or food processor with the other dressing ingredients and pulse to get small chopped pieces of tomatoes throughout the dressing.
  • For a thicker dressing that holds up to sturdier greens: add a pieces pieces of sun-dried tomatoes, but puree the dressing ingredients so the tomatoes are completely blended and provide a nice thickness to the dressing. This will be a better dressing on thicker salad greens like kale and chard, or as a nice coating to grain bowls, etc.
  • The oil on the left has 2-3 small slices of sun-dried tomato blended with the dressing for a thicker consistency, compared to the thinner dressing in the standard recipe on the right.

    Can You Make Mediterranean Chopped Salad Ahead

    You can do some of the prep ahead for this Mediterranean chopped salad. Thats another benefit of a lettuce-free salad, they dont wilt as easily!

    If you want to make this salad ahead, store the vegetables and dressing separately. Blend up the dressing it will last 5-7 days in the fridge. And chop your veggies theyll last 2-3 days in the fridge. Then right before serving, mix together.

    Give your sun-dried tomato vinaigrette a good shake before drizzling it onto the salad and if its too thick, add some more olive oil. Youll want to let the dressing come to room temperature so that the oil isnt solid.

    What a great salad. Especially in the winter when good tomatoes are hard to come by. We love us some BLTs here. So much so that we gauge the success of our tomato patch on how many BLTs we were able to make.

    I love homemade dressings and theyre so easy and no bottled taste. Yum! Saw the a la mode definition and it reminded me. When I was a kid, we moved from MA to AZ, so ate in a lot of restaurants along the way. One night I ordered apple pie a la mode and the waitress asked what kind of ice cream I wanted and I told her chocolate. My mom wouldnt let me get it she told the waitress to top it with vanilla. Ha!

    So, I wanted you to know, I dont really eat salad, but I showed this to my mom who cant get enough of the stuff. She also love sun-dried tomatoes.She was practically speechless and plans to make this asap!

    Vinaigrette Formula: 3 Parts Oil + 1 Part Vinegar

    The first step to making any homemade vinaigrette is to know the generally-accepted basic vinaigrette formula:

    3 PARTS OIL + 1 PART VINEGAR

    Once you have this formula down, you can add your extra spices, herbs, and other ingredients to your homemade dressings. We also like to add a bit of mustard as an emulsifier to our vinaigrettes to keep the oil and vinegar blended as much as possible.

    Two: Combine The Ingredients

    One: Strain The Leftover Sun Dried Tomato Oil

    The first step to making this vinaigrette using leftover sun-dried tomato oil is to remove the sun-dried tomatoes from the jar and reserve the remaining oil.

    Strain the oil from the sun-dried tomatoes, or reserve the leftover oil after using the tomatoes in other recipes.

    NOTE ON AMOUNT OF OIL FROM SUN-DRIED TOMATO JARS: We typically buy 8 ounce jars of sun-dried tomatoes. This size yields about ½ cup of oil after the tomatoes are removed. However, if youre able to buy larger jars in bulk to reduce packaging waste, increase the serving size in the recipe below for proper portions of all ingredients.

    Im probably doing myself a major disservice here by saying that its light on fresh veggies, it doesnt make it sound very summery, does it?

    A Few Final Thoughts:

    • I like to use dehydrated Sun-dried Tomatoes for this recipe, as they are Oil-Free. If you do the same, youll need to quickly rehydrate them in a little hot water before blending the dressing.
    • The Italian Seasoning adds a fair amount of flavor to this recipe, but I also think it would be great with an extra boost of fresh Basil.
    • The filtered water will naturally separate from the other dressing ingredients in the fridge. Make sure you give everything a good shake before pouring over your salad!

Whizzed all in little food processor, adjusting reg salt/sugar ratio at the end, and water to thin as desired. Makes more, lasts for approx. 2 weeks in refrig. Excellent over plastic tomatoes when you can’t get real ones. You could up Olive Oil, and add some balsamic in place of OrganicVille Dressing, if desired. Another tweak for another day. icons / like

    How To Make Sun Dried Tomato And Quinoa Salad

    • Cook the quinoa and chill, or just use left over quinoa from a day or two ago.
    • Add all the dressing ingredients to a mason jar, cover with lid and shake to emulsify.
    • In a salad bowl layer together spring lettuce blend, basil, quinoa, parmesan, almonds and sun dried tomatoes.
    • Shake dressing again then pour over salad and toss.
    • Serve right away for best results.
