This Mexican chopped salad is hers, and it is phenomenally delicious.

In fact, I believe she made it a couple months ago to feed a crowd of 100 and it was raved about for weeks.

Simple as can be, it has quickly become one of my favorite salads and is one of those endearingly versatile salads that can easily be served as a side dish or transitioned into a main dish with a simple addition of grilled chicken .

Our recipe doesnt include corn tortilla chips, but you can definitely feel free to add in some if youd like! We recommend that you use tortilla strips, or that you crumble up full-sized tortilla chips.

How To Make Taco Salad

Brown the ground beef in a large skillet with a drizzle of olive oil. Once its browned, drain any excess grease before sprinkling with taco seasoning. Add water, and simmer over medium heat until sauce has thickened some.

Meanwhile, prep the other taco salad ingredients . Add the lettuce, tomatoes, avocado, cheese, tortilla chips, corn, black beans, and beef to a large platter or bowl.

Make the taco salad dressing by whisking together the mayo, sour cream, lime juice, and taco seasoning. Add the cilantro and and lime juice and stir to incorporate. Evenly drizzle dressing over salad and toss to combine.

Tips For The Best Taco Salad

Feel free to mix and match toppings based on your favorite taco fixings and what you have on hand. Swap black olives for black beans, or add red onions or bell peppers.

I used 85% lean beef for this taco salad recipe, but if your beef contains more fat than mine youll definitely need to drain the excess grease before adding the meat to the salad.

The creamy lime cilantro dressing is a duplicate of the dressing I used for my chicken taco salad. It goes just as well with beef as it does with chicken and if you have any leftover, it makes a great veggie dip. You could also try this creamy avocado cilantro dressing with this beef taco salad.

Lastly, you can use plain Greek yogurt in place of the sour cream in the cilantro-lime dressing, if desired. You wont taste much of a difference, and the dressing will be slightly healthier!

Cilantro Lime Vinaigrette Ingredients

Vegan Taco Salad with Creamy Lime Dressing!

This salad dressing has a few more ingredients than most of my vinaigrette recipes. However, thats what makes it so satisfying!

  • Cilantro fresh, cleaned, de-stemmed and chopped.
  • Lime fresh juiced is best but store bought works in a pinch, too.
  • Garlic clove, cleaned and peeled.
  • Jalapeño remove seeds
  • Red wine vinegar You can switch this out for apple cider vinegar, champagne vinegar, etc, as noted below.
  • Sea salt A few cracks is all you need!
  • Spicy mustard Perfect to give this dressing more of a tangy kick.
  • Olive oil I like Extra Virgin Olive Oil but you can use whatever you have on hand.

How To Make Lime Vinaigrette

This lime vinaigrette is quick and easy: just 5 minutes to whisk it up! When I dont have lots of time or ingredients on hand, this lime or lemon vinaigrette are where I turn. Here are the main steps for this dressing:

  • Zest the lime, and use a knife to grind it into a paste. This part should only take a minute or so. Zest the lime, then use a knife to chop it very finely with a bit of kosher salt. You can use the knife blade to scrape it and help mash it into a paste.
  • Whisk in the lime juice and Dijon mustard. Add the fresh lime juice and Dijon mustard.
  • Gradually whisk in the olive oil until thickened. Whisk in the olive oil 1 tablespoon at a time until a creamy emulsion forms. Heres another trick for getting a creamy emulsion

Taco salad! Heres a new spin on an old favorite. You know that Im crazy about my Sizzling Everyday Roasted Chicken Breast but I am really crazy about my new Sizzling Pollo Picante Chicken Breasts, which are a delicious update to the original.

Here, I have used my Sizzling Pollo Picante The trick that takes it over the top is pulling the chicken off the bone and finishing it in a magic elixir of hot sauce and lime juice.

The thinly sliced jicama frites, are so crunchy and satisfying and the radishes and red cabbage add great color and even more crunch. But feel free to use this recipe as a jumping off point to change it up with what you have and make it your own.

Its fantastic with the Coconut Lime Vinaigrette MAGIC ELIXIRS which you will mostly likely end up using for other salads later in the week! But this would also be delicious with Whole Sisters Ranch, Smoky Red Pepper Sauce MAGIC ELIXIRS or even Green Goddess blended with some Tomato Confit MAGIC ELIXIRS.

  • 2Sizzling Pollo Picante chicken breasts, shredded
  • 3 tbsp of compliant hot sauce
  • 1 tbsp of lime juice
  • 1 tbsp extra virgin olive oil
  • 1 head of romaine
  • 1 bunch of small radishes
  • 2 avocados
  • 4 cups of red cabbage
  • 2 limes cut into wedges

Taco Pasta Salad Tips

  • Use textured pasta. Choose pasta that has plenty of nooks and crannies to hold that delicious chili-lime dressing. If you cant find bowtie pasta, I recommend miniature shells, rotini, or fusilli.
  • Dont use all the pasta. Most pasta salads call for an entire box of pasta, so its easy to go on autopilot and fix the whole box. However, this recipe calls for only 3 cups, so make sure to measure that out before boiling the pasta.
  • Salt the pasta water. Since this pasta is eaten cold, the flavors tend to get muted. Make sure the pasta is well-salted as it cooks since salting is the only chance you have to season the actual pasta. Dont be afraid to add more salt to the finished dish if it needs it. Read about how to properly salt your pasta water here. As a general rule of thumb, I add 1 teaspoon salt to 4 cups of water.
  • If you have time, make the dressing in advance. This dressing improves if its made in advance and chilling in the fridge the flavors meld together and intensify, plus, its just better chilled!
  • Assemble this salad right before eating. This is not a pasta salad that sits well with the dressing. The dressing wilts the lettuce quickly, giving it an unpleasant texture. If making in advance, store salad separately from dressing and combine the two right before eating. Only dress what will get eaten the same day.

  • Use a juicer. Alex and I use a juicer to quickly juice citrus and keep the seeds out. Heres the juicer we use: it works great!
  • For zesting: a microplane or grater. We use a microplane to make quick work of zesting. If you dont have one, use a grater. Smaller zesters that are more like bar tools dont work as well here.
