    I made it last week when I found myself drown in work, gasping for air and for something to eat.

    Like most of us, I of course had no time to eat, and even less time to cook or to go buy groceries.

    Luckily I found a jar of cooked quinoa Ive been just moving from one place to another for 3 days in my fridge, trying to get to my overnight oats.

    Ding ding ding! Lunch is ready: quinoa salad! I did not have all the ingredients to make my quinoa detox salad, so I invented a new somewhat leftover detox salad thats perfect for summer.

    I used very basic ingredients, whatever I had at home. And I must say, this quinoa salad tastes amazing.

    You will feel satisfied, yet light and will be able to do some more work after lunch. Personally it made me feel a little like Superwoman, because I did not need to take a nap on my desk this time. Finally!!! Who knew this is possible? And who knew that such a simple salad can taste like heaven?

    I also had some feta cheese leftovers in my fridge, so I crumbled them and threw them into the salad. If you are vegan or live dairy-free, just dont add it.

    1 package taco seasoning mix, divided
    2 chicken breasts, cut into small cubes
    1 teaspoon butter
    1 avocado, peeled and chopped
    ½ red onion, chopped
    ½ red bell pepper, chopped
    ½ yellow bell pepper, chopped
    cucumber, chopped
    2 jalapeno peppers, seeded and chopped
    ½ cup salsa

    Steps:

    • Bring water, quinoa, and 1/2 of the taco seasoning mix to a boil in a saucepan. Reduce heat to low, cover, and simmer until quinoa is tender and water has been absorbed, about 15 minutes.
    • Mix chicken and remaining taco seasoning mix together in a bowl let sit for chicken to season, about 10 minutes.
    • Heat butter in a skillet over medium heat cook and stir chicken until no longer pink in the center, 5 to 10 minutes. Place chicken and quinoa in a bowl and place in freezer until cooled, about 5 minutes.
    • Combine avocado, red onion, celery, spinach, carrot, red bell pepper, yellow bell pepper, cucumber, and jalapeno peppers in a large bowl add chicken-quinoa mixture and salsa and mix well.

  • In a saucepan over medium-high heat, combine the quinoa and water and bring to a boil. Reduce the heat to low, cover, and cook for 15 minutes, or until the water is absorbed. Set aside, covered, to steam for 5 minutes. Fluff the quinoa with a fork and transfer to a bowl. Cover and refrigerate for at least 1 hour, or until chilled.
  • In a small bowl, whisk together the oil, lime juice, salt, and pepper.

    Here are the substitutions I recommend for this salad. Please remember that when you make substitutions or omissions it will change the nutritional values of the recipe that you see below in the recipe card.

    • Quinoa Brown rice, bulgur or lentils could be substituted. Broccoli rice or cauliflower rice could be substituted for a low carb or Paleo version.
    • Mint Can be omitted.
    • Parsley The parsley is the key ingredient that makes this a Tabbouleh salad. If you have an aversion to parsley, I recommend swapped with a leafy green like kale, red chard, watercress, collard greens, spinach or cabbage. I recommend finely chopping them like you would the parsley.
    • Oregano Can be omitted, but omitting it will make this salad flavorless. The oregano really is key for flavor.
    • Red Onion White onion or scallions can be substituted.
    • Grape Tomatoes Any tomato variety can be used.
    • Red Wine Vinegar The red wine vinegar, like the oregano, is really key to the flavor of this salad. You could replace with champagne vinegar or white vinegar, but the flavor will not be the same.
    • Cucumber Zucchini or eggplant could be substituted.
    • Additions Olives, artichokes and feta cheese would make wonderful additions!
