To Make This Chicken Caesar Pasta Salad You Will Need:
- bowtie pasta
- kosher salt and freshly ground black pepper
Start by bringing a large pot of water to boil. Then add a tablespoon of sea salt and stir in 8 ounces dried pasta. Following the package directions, cook until al dente. Drain the pasta into a colander and rinse it under cold water. As a result, this will stop the cooking process while cooling down the pasta.
Meanwhile, preheat your oven to 400°. Rinse and drain 1 can chickpeas before patting dry. Next place them onto a small rimmed baking sheet. Spray with olive oil and season with a few pinches of kosher salt. Roast on the middle rack of your oven, roast for 40 minutes or until crispy.
Once roasted, lightly spray again with olive oil and season with 1 tablespoon of the garlic herb seasoning, tossing well until coated. This will help the seasoning stick to the roasted chickpeas.
Next, in a large mixing bowl, add the drained pasta, chopped romaine, 1/4 cup of the parmesan cheese and the sliced grilled chicken.
With that said, the chicken Im using was leftover from dinner a few nights before. However, you could simply season 2 chicken breast halves along with a little olive oil, then grill. Any leftover chicken would totally work!
Tips For The Chicken Pasta Salad
This chicken pasta salad is healthy, perfect for busy nights, and makes a big enough batch so you can plan for work or school lunches. Since theres no mayo its great for potlucks, picnics, and parties.
- Additional add-ins that go well with this salad would include chopped cucumber, crispy bacon, corn, olives, black beans
- To keep the avocado from turning brown, coat the avocado in either lemon juice or lime juice. It will act as an antioxidant.
- Being a cold chicken pasta salad makes it perfect for summer, picnics or potlucks. You can make it up to a day in advance, leaving the avocado and tomato until you are ready to serve the chicken pasta salad to keep the ingredients as fresh as possible.
How To Store The Chicken Pasta Salad
This chicken pasta salad keeps in the fridge for up to 3 days if stored in an air-tight container. Dont keep it for more than that because avocado will turn brown ultimately. If you want to make it ahead of time, just omit the avocado, youll add them at the very last minute.

How To Make Broccoli Salad
To begin making your salad, you will want to start off by cutting your broccoli florets off the bunches and then cutting them small, into bite-size pieces. After they are cut, place them into a colander and rinse them thoroughly. Allow them to dry.
Next, if your bacon is raw, youll want to cook it thoroughly and then cut it into small pieces. You will also want to grate your cheese if you did not buy pre-shredded cheese. Then remove the peeling from your red onion and chop it up.
In a mixing bowl combine your broccoli florets with cooked and crumbled bacon, shredded cheese, sunflower seeds, red onions, and dried cranberries. In a separate small mixing bowl, combine mayonnaise with sugar and vinegar. Stir to combine.
Add your dressing mixture into your broccoli mixture and stir until your broccoli is thoroughly coated. Cover and chill until youre ready to serve. Then, serve and enjoy.
Can I Grill Chicken Instead Of Using Rotisserie Chicken
Yes, of course, you can grill chicken for this salad. Make sure to grill chicken breasts or pan-sear on medium-low heat, so chicken doesnt burn while undercooked in the inside. When out of fresh chicken, we like to use a bag of frozen grilled organic chicken breasts that we heat up in a skillet and use for the salad.

Chickpea Pasta Salad Tips
- Cook the chickpea pasta according to package directions, in salted water. The cook time will vary by brand and pasta shape. I cooked this chickpea rotini for 8 minutes to keep it al dente.
- Add the vinaigrette while the pasta is still warm. This salad tastes better the next day because the vegetables and pasta have time to almost marinate in the vinaigrette for maximum flavor in each bite.
- Keep this salad in the refrigerator for up to 3 days. This pasta salad is perfect for meal prep.
Why This Mediterranean Pasta Salad Is So Healthy
- The Noodles: I opted to use chickpeas noodles to keep this pasta salad recipe gluten free and chickpea noodles are also high in protein. You can also use cassava flour noodles, brown rice noodles, or even regular pasta noodles.
- Fresh ingredients: Its so easy to sneak in fresh vegetables with your pasta salad, and its an easy way to increase your fiber intake. I added cherry tomatoes, cucumber, olives, artichokes, onion, arugula, etc. But, feel free to substitute any of these vegetables with any of your favorites.
- High Protein: Traditional Mediterranean Chicken Pasta Salad recipes dont contain chicken. However, to turn this dish into a high protein meal, I added shredded chicken to the mix.
- Homemade Dressing: Instead of using store-bought dressing, I whipped up a fresh vinaigrette. High quality extra virgin olive oil has so many health benefits and a great way to sneak in extra healthy, brain-boosting fats.
How To Make A Good Pasta Salad
- Salt the pasta water. This is your chance to season the base of the salad. You want the pasta water to be as salty as the sea. Yes. Youll add more salt here than would seem healthy. But I promise the pasta wont absorb most of the salt.
- Seed the cucumber. Either use seedless cucumbers or use a spoon to scoop the seeds out of the cucumber before dicing. This is a major key to avoid a watery pasta salad. Need help? Check out this How to Seed a Cucumber video.
- Use a homemade vinaigrette. Sure. You can use a bottled dressing. But the salad dressing will make or break this recipe so keep this in mind.
- Dress the salad while the rotini is still warm. This will help the pasta soak up all of that lemon garlic goodness.
