I decided a couple of cold side dishes, that I could prepare in advance, was the way to go. Potato salad in particular is one of those things I like made a day in advance.

I think it tastes better when the flavours have been allowed to sit for a while. I especially like potato salad to be very cold.

There is something very off-putting to me about potato salad that is at room temperature and always has been.

Even as a kid, when preparing a traditional Newfoundland cold plate for Sunday Supper, I almost always did the potato and pasta salads on Saturday. Sunday afternoons could be even lazier then.

The leftover cold cuts from our Sunday roast, and the already prepared salads could just be pulled from the fridge and served in a snap.

What Is Deviled Egg Potato Salad

Deviled egg potato salad is a delicious and creamy potato salad that is packed with flavor. It is made with deviled eggs, potatoes, mayonnaise, mustard, and vinegar, and it is perfect for any potluck, barbecue, or picnic.

The ingredients in this recipe are kept simple and basic.

Potatoes. One of the main ingredients in potato salad is obviously the potatoes. It is important to pick the right potatoes because different potatoes offer different things. In this case, I am using gold potatoes. You can also use red skinned potatoes. Both of these types of potatoes have less starch than other potatoes.

Hard Boiled Eggs. The deviled eggs part of this recipe comes in with making the dressing taste like devilled eggs. You will be mixing the yolks of the eggs into the dressing and the whites will be chopped up and added to the rest of the salad. This brings in even more of the deviled egg flavor.

The Dressing. The dressing is a classic mayo-based dressing. It made just like making a deviled egg filling, with egg yolks, mayo, mustard and vinegar.

    Deviled Egg Potato Salad Recipe

  • Place the potatoes in a large pot and cover with water. Boil over high heat until fork-tender, about 10 minutes. Drain under very cold water and let rest to dry.

  • Add the mayonnaise, mustard, vinegar, garlic, salt, paprika, and pepper to the bowl with the egg yolks. Whisk to combine.
  • Add the cold potatoes to the dressing in the bowl and stir to coat the potatoes. Add the red and green onions and chopped egg whites. Stir to combine.
  • Garnish with additional green onions and sprinkle with paprika. Serve immediately or cover and refrigerate until ready to serve.

Deviled Egg Potato Salad The Idea

The idea for a deviled egg potato salad was kind of a cross between egg and apple potato salad that I made while growing up. I combined that idea with a deviled egg recipe that I used years ago and a potato salad that I saw on a cooking show a while back .

Their deviled egg potato salad had raw onion in it, which is one of the things I despise in potato salad, so that was out for me.

In the end I just took the things that I like, tossed them together and it was exactly as I wanted it. My guests thought it was delicious too and went home with the leftovers. Mom had the leftovers from the Old Fashioned Peach Crumblethat we had for dessert too.

The flavours are very simple and satisfying but what made the salad for me is the chopped sweet pickles. Their crunchy sweetness was great in this salad.

Youll love it served with anything from the grill or BBQ this summer or maybe you can have it year round on those simple cold plates that we Newfoundlanders still seem to love.

Why Do They Call It Deviled

Deviled Egg Potato Salad Recipe | Episode 618

When something is deviled it usually means it is hot and spicy, often including ingredients like pepper sauce, mustard, cayenne pepper, and other spicy seasonings. Deviled eggs usually have the yolks removed, then combined with mayo, and some of these slightly fiery elements. The mixture is then stuffed back into the hollow of the cooked egg white halves.

In the case of this salad, the hard cooked eggs are chopped, combined with cooked potatoes, and a dressing made of many of the same ingredients used in Deviled eggs, with a creamy mayo base.

How To Make Creamy Deviled Egg Potato Salad

Begin this recipe by scrubbing, peeling, and quartering the potatoes.

In a large pot, cover the potatoes with cold water, bring the water to a boil, and boil uncovered for 15 to 20 minutes.

The potatoes should be fork-tender and almost falling apart. Drain the potatoes and set them aside.

Slice the hard-boiled eggs in half. Put the yolks in a large bowl. Chop the egg whites and set them aside.

Next, you will mash up the egg yolks, just like you would for deviled eggs. Using a fork seems to work the best for this. Add the mayo, mustard, vinegar, salt, and pepper, and whisk until smooth.

Add the chopped egg whites and onion to the egg yolk mixture.

Once the potatoes are cool enough to handle, dice them, and add them to the egg yolk mixture. Cover and chill for at least 1 hour or overnight before serving.

Finish this recipe by garnishing each serving with paprika.

How Tomake The Perfect Boiled Eggs:

Ive found that the easiest way to get a perfect boiled egg is to place the eggs in cold water, then bring them to a boil on the stovetop. As soon as they reach a good boil, turn off the burner, secure the lid on the pan, and let the eggs stand for 30 minutes. Drain the hot water, and refill the pan with cold water. Let them sit for 10 minutes, drain, replace the lid, and gently shake the eggs around in the pan. Doing this will loosen the shells and make them easier to remove. The best part is that using this method is that it will not overcook the yolks. There will be no greenish-gray ring around the yolk at all. They will have a nice bright yellow-orange color.
