This recipe is really easy to make. Lets walk through the steps really quick.

  • Prepare Chicken by either shredding, cubing the chicken. Or draining and using a fork to pull canned chicken apart. Set aside until cooled.
  • Slice grapes in half, roughly chop nuts, and dice the onions and celery. Grate cheese. Add to the chicken and carefully toss.
  • Whisk Greek yogurt, honey, lemon juice, and seasonings. If its too thin, add a little milk. I like it thinner than sour cream. Pour over chicken and gently toss to coat.
  • Adjust seasonings to taste.
  • Refrigerate for up to 2 hours if possible. If not it will still be fine!

Make Chicken Salad With Leftover Chicken

Like most chicken salad recipes, using leftover chicken makes this come together quick and easy. Luckily, I have a local market that makes some of the best rotisserie chicken in the area. Its a great way to make this a rotisserie chicken salad with Greek yogurt in under 30 minutes.

When I have time, I usually roast 2 or 3 split chicken breasts and use them in this salad. I like breast meat because it is easy to flavor and low in calorie compared to other parts of chicken. If you need a foolproof recipe, be sure to try my Oven-Baked Bone-In Chicken Breast recipe.

With that being said, you can use an equal amount of roasted chicken thighs as well.

PRO TIP: For this recipe, I purchase about 3 large rotisserie chicken breasts, since one breast will give you roughly 1 cup of cubed chicken. If you dont mind a mix of light and dark meat in your salad, 1 whole rotisserie chicken will yield about 5-6 cups cubed chicken. You can either double the recipe or use the other half for another use.

Now It Is Time To Make Your Greek Yogurt Chicken Salad Sandwich

I love sourdough! It is one of the healthiest types of bread you can eat as well. It consists of very few ingredients. Sourdough also has about 7 grams of protein per slice and is rich in vitamins and minerals.

Begin by toasting two slices of sourdough bread. Next, spread pesto on one slice of bread and stack spinach on top of that. After that, scoop ¾ a cup of chicken salad on top of the spinach. Place the second piece of sourdough on top, and there you have your healthy chicken salad sandwich.

Is Greek Yogurt Healthier Than Mayo

    Greek Yogurt Chicken Salad

Greek yogurt is healthier than mayo, because its higher in protein, has fewer calories, and contains less fat. Dont worry, it creates a similar consistency and taste to mayo. I love substituting greek yogurt for mayo to lighten things up.

Parsley- If you dont have fresh parsley, you can sub with 1/4 the amount of dried parsley. If you dont have or like parsley you can substitute with some fresh dill, thyme or even basil!

Chicken salad is such a versatile option and there are so many different ways to serve it. Here are the ones I find myself making the most.

    • Sandwiches and wraps: It’s hard to beat a classic chicken salad sandwich. Grab your favorite whole wheat bread, pita, wrap, or even an English muffin. Layer in the chicken salad with tomatoes, lettuce, red onion, and sprouts.
    • Salads: Another option is to serve this healthy chicken salad over a bed of salad greens. I like to use crunchy lettuce like Romaine and add diced cucumbers, tomatoes, extra celery, apples, and sprouts.
    • Lettuce Wraps: For a low carb option, grab a head of butter lettuce and serve the salad right inside the leaves. Top with extra veggies if you like.
    • Stuffed cucumbers or tomatoes: Another delicious low carb option is to hollow out cucumbers or tomatoes. Use a spoon to scoop out the seeds and fill it with chicken salad.
    • Chicken melts: Instead of making a tuna melt, make an open-faced chicken salad melt with sliced tomatoes and some Swiss or cheddar cheese.

Greek Yogurt Ranch Chicken Salad Sandwiches

Greek Yogurt Chicken Salad with Pine Nuts, Grapes, and Fennel Recipe

My husband and I go through Greek yogurt at an almost alarming rate. Every single time I hit the grocery store, Im buying one or two of the largest tubs I can find of our favorite brand. Each time I peel back the foil on a new tub, I think to myself didnt I JUST open a new container? The answer is yes, yes I did.

The funny thing is, we rarely eat yogurt just as yogurt. Maybe one morning a week, one of us will have a vacation-in-Greece-inspired bowl of yogurt topped with honey and walnuts, but that only accounts for a small portion of the yogurt we go through. The vast majority of it is used as an ingredient in savory recipes. Yogurt-based salad dressings, yogurt sauces for chicken and fish, yogurt in place of sour cream or mayonnaise in just about anything. Im sure youve noticed it in at least half the recipes on this blog!

Thats why Im always thrilled when brands like Hidden Valley® create products that fit into my Greek yogurt-obsessed life. By simply stirring Hidden Valley® Greek Yogurt Dips Mix into nonfat Greek yogurt, I have a creamy dip with less fat, more protein, and fewer calories than traditional ranch dip. But I didnt stop there.

  • In small bowl, stir together dip mix and yogurt.
  • In large bowl, toss chicken, onions and yogurt mixture until well combined.
  • Serve chicken salad on croissants, topped with lettuce and tomato.

    Ingredient Notes & Substitutions:

    • Chicken: You can cook chicken right before making the salad or use leftover rotisserie chicken for a 30-minute recipe.
    • Yogurt: I like to use full-fat Greek yogurt in this recipe but for more of a Skinny Chicken Salad with Greek yogurt, simply use fat-free or non-fat yogurt instead of whole milk.
    • Fresh herbs: I use a combination of fresh dill and fresh chives but you can use fresh parsley or even fresh mint if you like.
    • Not a fan of grapes? If you prefer your yogurt chicken salad without grapes, simply omit using them.
    • Want to make a chicken salad with no fruit? Replace the apple and grapes with an equal amount of diced fennel and cucumber for a bright, crisp flavor.
    • For a sweeter, fruitier salad, use Honeycrisp or Gala apples. For a tart, crisp chicken salad, use Granny Smith apples instead.
    • Make a shredded chicken salad recipe with Greek yogurt by replacing the cubed chicken with an equal amount of shredded chicken. Just note it will be softer in texture.
