I have a whole tutorial on my Mediterranean Farro Salad post on choosing the right type of farro and how to cook it, but the cliff notes are below.

Because of possible label confusion on which type you are getting, I recommend going by the package directions for cook times or by taste when farro is done, its done. The farro that I buy from Bobs Red Mill takes 30 minutes to cook, but the one from Trader Joes takes 10.

If you are lucky enough to find actual whole farro, youll have better success if you soak it overnight first, like beans, before cooking. To cook, rinse farro then place in a medium sized pot along with cooking liquid of choice, like water or broth.

For this recipe, youll use roughly 1 cup of uncooked farro and 3 cups of water or broth. Bring to a boil, then reduce heat , cover and simmer until tender and chewy. The cooking time depends on what type of farro you are using: pearled typically takes 15 minutes while semi pearled takes 25-30.

Dress Up Your Salad With Grains

You can turn a simple salad into a hearty, texture-rich dish just by adding a few grains, writes Martha Rose Shulman in this weeks Recipes for Health.

When a grain is not the main ingredient in a salad you appreciate it for its texture and for the nutty flavor it contributes to the dish. Authentic Middle Eastern tabouli, for example, is a parsley salad to which a small amount of fine bulgur adds a bit of substance. I made a tabouli of sorts this week with lots of parsley and a little bit of barley, and I made a kale salad with a little bit of quinoa added. Both of these I served as side dishes or starters.

I had a bit more bulgur, couscous and brown rice on hand so I used them for more substantial salads, one that combined bulgur and greens, another that mixed an assortment of different grades of brown rice and a little bit of farro with roasted red peppers, herbs and feta. I used the remains of a box of whole wheat couscous and a little bit of sorghum to show off my tomato crop. They were all perfect dishes for hot summer days. Those that dont call for seasonal summer vegetables will also be great at any time of year.

Could farro salad be the new couscous salad? You certainly see it often enough on menus and at fancy takeout shops to make the case. But like with its cousin couscous, farro salad can be hit or miss. Sometimes its a deeply flavored, multi-textured delight. Sometimes its dull and bland.

But thats not the farros fault. This hardy, earthy grain has plenty of flavor if you treat it right. And to do so isnt hard.

There are two essential steps to a stellar farro salad. The first is cooking the farro with enough salt and aromatics so that it is delicious before you combine it with the rest of the ingredients. When you hear the word salad, a bowl of dressed lettuce or other greens may come to mind. On the other hand, chicken salad, tuna salad and potato salad dont necessarily imply anything green and leafy. And a juicy tomato salad is usually mostly tomatoes, with garlic and herbs added.

Theres really no salad I dislike, but lately its grain salads I desire. Give me quinoa, wheat berries, millet, buckwheat, brown rice or white: All are good candidates for salads. But on these cusp of summer days, one made with farro is what Ive been craving for lunch or supper.

Gaining in popularity in the United States, farro, an ancient wheatlike grain, has long been prevalent in Italy and the Mediterranean. The word farro can be used to describe three varieties of ancient wheat spelt , einkorn and emmer . Use whichever kind you find. Long a harder-to-find grain, its now found in supermarkets, health-food stores, Italian grocers and, of course, online.

Though it can be also cooked and served warm dressed with a vinaigrette, it makes for a filling grain salad that pairs well with seasonal vegetables.

Farro salads have a lot going on in the texture department. Unlike their softer sisters quinoa, couscous and rice farro has a hearty, starchy chewiness thats satisfying even before you start tossing in piles of diced vegetables, dried fruit and toasted nuts.

But just because farro salad doesnt need textural help doesnt mean it wont like it. And it turns out, when you introduce crispy roasted chickpeas to nubby farro, they get along brilliantly, amiably competing crunch versus chew and doing so in the tastiest way.

Whenever I make crispy chickpeas, I tend to prefer the ease of roasting to the oily splatter of deep-frying, even in summer. However, if I am going to turn the oven on in August, it has to do double duty. So while the spiced chickpeas are sizzling away on one oven rack, I stick a pan of corn kernels on another rack, roasting them until they turn lightly golden, their juices condensing and getting even sweeter in the blasting heat.

You can mix the vegetables the roasted corn, slivered fennel and scallions into the farro ahead of time, too.

As with most salads, this one is customizable based on what you have in the house or what looks good at the market. I try as much as I can to create recipes that let you take control, I know thats why I gravitate towards cooking over baking. Sub another vegetable that youd prefer, play around with ratios, add more cilantro or scallions to taste. It all works.

Substitution ideas: Fresh corn kernels, cherry tomatoes, finely chopped red onion for the scallions, or basil or parsley for the cilantro. For extra protein, feel free to add in cooked chickpeas or white beans.

How To Make This Healthy Summer Farro Salad

Once your farro is cooked, this salad couldnt be easier to throw together in one bowl, which makes for easy cleanup. Start by whisking together all of the ingredients for the dressing in a large bowl until very smooth and creamy. If the sauce is too thick, thin with a tablespoon or two of water.

Add in the rest of the ingredients for the salad all of the vegetables, cooked farro, cilantro and scallions. Toss well, taking care to ensure that all of the grains and vegetables are well-coated. Mix in chopped peanuts and serve, garnishing with more cilantro, scallions and chopped peanuts as desired.

I cooked up a pound of dried chickpeas over the weekend, and Ive loved the freedom of being able to just toss a handful into almost everything weve been eating or at least everything that could benefit from their savoriness.

They starred in Tuesday nights dinner, mixed into a nubby bulgur salad with loads of sliced vegetables and just enough herbs to speckle it green. It was crunchy and lemony, and a perfect partner to the sardines we ate on the side, though the salad didnt really need anything else.

This basic recipe will work just as well with canned chickpeas or any canned beans you have on the shelf.

To make enough for four, youll need about 2 cups of cooked chickpeas or beans, or one 15-ounce can, drained .

First, though, make the bulgur: If you have instant or fine bulgur, you dont even have to cook it. Just add 1½ cups to a large, heatproof bowl, and pour in enough boiling water to cover the grains by 2 inches. Add a large pinch of salt, and let it all soak for 30 minutes or so, until tender. Drain, squeezing the warm grains while theyre in the strainer to get rid of as much excess water as possible.
