Ive had chicken salad on a few occasions where the chunks were way too big, and you end up eating a cube of chicken, followed by a whole pecan, then a grape. I dont see the salad in that. I like to have a decent distribution ingredients a little bit of everything in each bite. Call me crazy.
I dont usually keep slivered almonds on hand, so I just run whole almonds through the food processor along withthe cranberries. I dont dust the almonds completely, just break them up a bit and spread the cranberries out some too. Just do as much or as little as youd like. I trust you.
I use canned chicken because its convenient and the consistency is perfect for chicken salad. It breaks up easily, but doesnt get too fibrous while stirring it like shredded chicken can.
If you prefer or have some to use up, cooked chicken may be subbed, just aim to chop it so the pieces are managable
The last thing Ill mention is to not be shy with salt & pepper, especially the pepper, it really works here.
