    Easy Homemade Salad Dressings

    May 16, 2019 by Candace

I rarely have store-bought salad dressings in my fridge for two reasons. One, there arent many pre-made dressings out there that dont have some kind of ingredient that I dont want in my salad dressings, whether it is sugar, or some weird processed oil or preservative. And two, they are SO easy to make, and most of the time you already have all of the ingredients you need right in your fridge or pantry!

My two favorite oils to make dressings and vinaigrettes with are extra virgin olive oil and avocado oil. Today, I used avocado oil from NOW Foods in all of these vinaigrettes, I love the neutral flavor that avocado oil gives to these recipes. It is such a subtle flavor that you can use it in almost any kind of vinaigrette and it wont overpower the other flavors.

    Benefits of Avocado Oil ->

    • very high in healthy fats, including oleic acid
    • has beneficial effects on cholesterol levels, and may also raise HDL good cholesterol levels
    • contains antioxidants that are good for eye health
    • contains fatty acids that are beneficial for the skin
    • has a high smoke point, which means you can cook with it, thus making it easier to add into your diet

Here are 3 vinaigrettes that each only require a few ingredients, and can be added to pretty much anything. Salads, roasted veggies, used as marinades, and the list goes on

Creamy Parsley & Avocado Dressing Recipe – Dairy Free, Nut Free & No Oil!

It doesnt take much to make an amazing nutrient dense salad dressing, heres what youll need:

Avocados Rich in monounsaturated fats and fibre, avocados are life. It adds a creamy rich factor so you dont actually have to add much oil.

Garlic I love a good garlicky bite in my salad dressing, but feel free to add more or less depending on your preference.

Lemon juice Pro tip: never use bottled lemon or lime juice. Its bitter and lacks that sparkle and zip that youll get in a real fresh lemon or lime. To get the most juice out of your lemons, you can pop it into the microwave for 10 seconds, then give it a good roll on the counter before slicing in.

Avocado oil Avocado oil is a great neutral tasting oil that is rich in monounsaturated fats. If you dont have avocado oil, you can use an olive oil, canola oil, or grapeseed oil!

Fortified nutritional yeast If you are following a vegan diet, nutritional yeast is a great source of B12 if you go for the fortified version. Its also got a cheesy flavour that I absolutely adore, and its rich in protein. I dont believe in superfoods, but I think its pretty damn super.

Fresh basil If you have a bounty crop in your yard, this is how you should use it.

Agave/maple/honey Whatever you want to use to sweeten this up and balance out the richness works for me.

    Chosen Foods Avocado Oil

My favorite way to use this avocado dressing is on salads. I love that its rich and creamy, but that its not made with sour cream, mayo, or yogurt, like many creamy dressings are. Youll find it in this Asparagus Salad recipe, but itd be lovely on my Bright Spring Salad or Simple Green Salad too.

Roasted Garlic And Avocado Oil Salad Dressing

This dressing is excellent for dinner parties and easily complements a warm vegetable salad by roasting the garlic alongside.

    Makes 1 cup

    • pinch of salt and pepper

  • Heat the oven to 400 °F or 200 °C.
  • Remove any loose peel from the garlic and shallots. Cut the top off the garlic and pour one tbsp of avocado oil into the center.
  • Wrap the garlic and shallots in aluminum foil and drizzle with one tbsp of avocado oil before placing in the oven for an hour.
  • Once cooked and cooled enough to handle, squeeze the garlic and shallots from their peels and into a food processor.
  • Add two more tbsp of avocado oil and the remaining ingredients and blend until smooth.
  • Slowly add the remaining avocado oil to the processor and blend until fully incorporated.
  • Avocado Oil Vs Olive Oil

    • When comparing the flavor of avocado oil and olive oil avocado oil tends to be more mild and neutral tasting, making it more versatile oil to use for salad dressings and baking, whereas olive oil, with its mild peppery and fruity flavor, is best used for cooking savory dishes and bolder tasting salad dressings. The peppery flavor found in a good quality extra-virgin olive oil comes from a polyphenol antioxidant called oleocanthal.
