Why I Love This Deli Tuna Salad

How we make Tuna Salad, Best Old Fashioned Southern Cooking

Now, I know tuna salad is a basic dish. Tuna, mayo, maybe some onion or seasonings… no recipe required, right? Okay, yes, you’re right.

But I’m a tuna salad connoisseur. My family used to tease me on vacation because no matter where we went, I ordered tuna sandwiches. At one point, I even made an illustrated chart ranking all the tuna salads I had ordered on our trip. But I digress.

The best tuna salad I’ve ever had, was the one my grandma picked up at the deli counter of the Foodland near her house in Pittsburgh. It was a light, pale pink color, heavy on the mayo almost creamy but without the mayo flavor coming on too strong. It had crunchy bits of carrot and celery throughout, as well as flecks of white and yellow, hard boiled eggs chopped right into the mix.

Over the years, I’ve tried to replicate that tuna salad somewhere, my mom has an index card on which I scrawled “REBECCA’S TUNA SALAD” my very first recorded attempt at making it myself over a decade ago.

But there was always something missing. I’d add paprika, or oregano, maybe toss in some capers or finely dice the onion instead of doing a rough chop. Maybe more salt and less pepper? No, more pepper and less salt? The end result was always kind of close but that x-factor, that thing that brought it all together, remained a mystery.

Ingredients To Make Tuna Salad

  • Tuna: I like to use white albacore as it has a great chunky and firm texture that doesnt disappear when you mix it with the other ingredients
  • Celery: Celery adds a wonderful crunchy texture as well as a hit of freshness.
  • Red onions: I prefer to use red onion in salads as it is much milder than white. Mince it finely so that its not overpowering.
  • Greek yogurt: I use Greek yogurt rather than mayonnaise, to make this wonderfully creamy. Greek yogurt is also a great source of protein and probiotics.
  • Lemon juice: Use freshly squeezed lemon juice for a wonderful zingy taste that cuts through the yogurt.
  • Dijon mustard: Mustard adds some tang and spice and works so well with the other ingredients.
  • Salt and pepper: To help bring out all of the other flavors.
  • Parsley: Fresh parsley really lifts this dish and makes it light and fresh tasting. You can use other fresh herbs like cilantro or dill.

Classic Pureed Tuna Salad

Classic pureed tuna salad is perfect for weight loss surgery patients following surgery. This recipe is not only great when you need to eat pureed food, but can also be used in the soft food stage and beyond.

Most adults arent super excited by the idea of eating pureed food. Regardless of the reason, we associate pureed food with baby food. My kids spit out baby foods and refused to eat it. What if I told you that you could eat normal adult food that was pureed and it wouldnt be gross?

How many of you eat tuna? You either love tuna or hate tuna. For those of you who like tuna, you can incorporate tuna salad into your diet during the pureed food stage. Tuna salad is normally soft and with just a few pulses in a food processor can be pureed into a smoother consistency.

In the past ten years, only a handle full of patients has not made a face when I discussed the pureed diet stage after weight loss surgery. Most adults can’t bring themselves to eat pureed food. My go-to suggestions have always been tuna salad and chicken salad. These choices are already pretty soft. All you need to is make sure the meat is shredded so there are no chunks.

Canned tuna: We buy canned albacore tuna thats been caught with hand-operated pole-and-lines. We also prefer the cans with tuna thats been cooked in the can. This tuna tends to be more succulent and retains all of its natural juices and fats. Brands that dont can tuna this way, cook the tuna first and then can it, which means that much of the natural juices and fats get lost. Thats why you will often see tuna canned in water or oil. When the tuna is cooked right in the can, there is no need for the extra water or oil. On that same token, when you buy tuna thats been cooked in the can, there is no need to drain it before making tuna salad.
