A Caesar salad is not a Caesar salad without the dressing. While you can use a store-bought dressing, there is no substitute for a homemade dressing made from fresh ingredients. This article will show you how to make Caesar salad dressing from scratch, as well as how to put the salad together. It will also give you some ideas on variations, such as Chicken Caesar salad.
What Is A Caesar Salad
A classic Caesar salad has just a few main ingredients: greens, a creamy dressing, croutons and cheese. Toss everything together and you have a crisp, crunchy and refreshing salad.
But where did Caesar salad come from? Many people assume the salad has ties to Julius Caesar, but it actually originated in Tijuana, Mexico. Chef Caesar Cardini invented the recipe in 1924 and would assemble and serve it tableside at his namesake restaurant.
Today, there are countless variations, but the same basic components remain the same:
How To Make Caesar Pasta Salad:
1. Cook pasta according to package instructions then rinse in cold water and drain.
2. Rinse, chop and spin the romaine lettuce dry using a salad spinner . If you dont have a salad spinner, pat dry with a clean towel.
Cooks Tip:The dressing will coat the salad much better if the lettuce isnt wet. Transfer lettuce to a large mixing bowl. Toss in the diced avocado and halved tomatoes.
3. Creamy Caesar Dressing to really boost the flavor of this salad. Its so creamy and good! Toss to evenly coat the lettuce. Add the dressing to taste. Sprinkle with parmesan and croutons. Yum. Yum

About These Caesar Croutons:
Like all the other croutons, Caesar croutons are also a great way to use up leftover or stale bread if that exists in your house. These garlic Parmesan croutons are flaked with herbs and have so much flavor for the perfect Caesar salad. I opt for garlic powder for a more mild flavor but if youre a huge garlic fan, feel free to mince a couple of cloves and go garlic crazy!
Tip: The more stale and dry your bread cubes are, the faster these will brown! If your bread is dry, make sure to keep a close eye on it to keep it from burning. If your bread is quite fresh, plan on slightly increasing baking time.
Want to use these croutons but switch it up from the usual chopped romaine? I cant wait to try this Brussels Sprouts Caesar Salad from A Mindfull Mom, Grilled Caesar Salad from The Little Kitchen, and Roasted Asparagus Caesar Salad from Nutmeg Nanny.
PS: Try homemade Caesar Dressing its a healthier version and its fantastic!

Anchovies In Caesar Dressing
There’s debate about whether anchovies were traditionally in Caesar salad or not. I used to be a bit squeamish around the thought of anchovies in my salad dressing, but it adds so much flavor to the dressing, it’s so worth it.
Plus, when you use this anchovy paste, it’s way easier. The only ingredients are anchovies, olive oil, and salt. Perfect!
Ever heard of umami? It’s that savory flavor that makes food taste oh-so-good. Anchovies bring the umami to the dressing.

Do you know how to make caesar salad?
You dont necessarily have to make this delicious salad with freshly cooked chicken like in the recipe below. You can easily incorporate some leftover cooked or roast chicken from yesterdays dinner for instance.
Some supermarkets even sell ready cooked and sliced chicken, at least my local supermarket does. I once bought smoked chicken for this salad. Absolutely delicious!
Whatever you use or add, it goes without saying that this classic caesar salad is also a great way to use leftovers!
A Question Of Croutons
One of the special geniuses of caesar salad is the textural contrast between the juicy, salty lettuce and the crunchy croutons the original, as recorded by Day-Lewis, is topped with sourdough bread, cut into cubes and baked with a little garlic-infused olive oil. I’m not sure these can be improved upon frying them in the garlic oil instead, as the Leiths Cookery Bible recipe does, makes them too greasy, so they compete with the dressing itself.
Nigella, who complains she ate more than her fair share of the “messed-about caesar salad” during her years as a restaurant critic, nevertheless goes on to give a variation upon perfection by replacing the croutons with cubes of roast potato cooked in liberal amounts of garlicky oil. Her logic is that, for a dinner party, this saves you cooking spuds for the main course these can be done in advance and allowed to cool slightly. It’s not a bad idea but, however crunchy you get them, they’re never going to compete with a crouton in the crispness stakes which is the whole point with this particular salad.

Best Homemade Caesar Dressing
Traditionally, Caesar salad is made using an egg emulsion. If you don’t want to use raw eggs, you can make a decent Caesar-ish dressing with yogurt, or store bought mayo. But we’re keeping it traditional today.
I tried a recipe with yogurt as the base and it didn’t quite have the flavor that I was looking for. Today, we’re sticking with tradition. Well, sort of…

So I made a recipe that uses the whole egg . The salad dressing is a little bit thinner than the yolk-only version, but the flavor is the same.
How Long Does Homemade Caesar Salad Dressing Last
You can keep it in the fridge for about a week. Of course, if you notice any off sights or smells, use your own judgement and don’t eat it. This recipe makes about one cup .
I like to make a batch and use it on a salad right away and then I keep the rest in one of these mason jars that are the perfect size for the remaining dressing.

Making Great Caesar Salad
The best Caesar Salads start with a stellar dressing. The one I go to most calls for classic ingredients, which means well be whisking together raw egg yolk, anchovies, garlic, lemon, and oil. If you arent a fan of using raw eggs, take a look at this egg-free dressing instead.
The dressing can be made up to a day in advance. Most of the time, I make it by hand using a bowl and whisk, but you can make it using a blender, immersion blender or food processor. The method for making it by hand is what is shown in the video since we knew everyone will be able to make it this way. We also have an in-depth tutorial for making it here.
Once you have your dressing made, the rest of the salad is pretty darn simple. Croutons are essential for some crunch. You can buy them, but they are also very simple to make yourself.
Simply tear or slice bread into small chunks and toss with olive oil, salt, pepper, and if youd like to add them, some dried herbs. Bake the seasoned bread in the oven until crisp.
Romaine is the standard for Caesar salad. You can tear the leaves or chop them. If you chop them, keep in mind that Romaine lettuce has a tendency to brown around the cut edges over time. Its because of this that I chop right before serving or simply tear the leaves.

Make The Best Dressing
Caesar salad is all about that classic creamy dressing. The dressing should have plenty of garlic and Parmesan cheese, a bit of briny anchovies, and lots of black pepper. This classic uses raw egg yolks to build a creamy emulsion without any cream. Use pasteurized egg yolks if you are feeding this salad to the very young or elderly, or feel uncomfortable with raw egg yolks.

How To Make Caesar Dressing Without A Food Processor
For this recipe, I utilized a food processor. But what if you dont have one? No biggie! Heres what I would recommend:
- Grab a large bowl
- Mince up and mash the anchovies and garlic together. Add a pinch of salt to them both and mash and mash with the back of your knife so that it resembles a paste. No big chunks of garlic allowed!
- Grate the Parmesan with a box grater or hand grater. And then proceed by mixing everything together. A whisk will be your best friend in this.
