  • It’s important to put the potatoes in the pot of water before you heat up the water and bring it to a boil. This ensures even cooking. If you drop the potatoes into already boiling water, the outside of the potatoes will cook quickly, while the inside will stay hard.
  • Boil the potatoes whole. Do NOT dice or peel the potatoes before they go in the water. Cutting or dicing the potatoes causes them to release steam while cooking, which will result in a mushier potato.
  • The potatoes will take about 15-20 minutes in the boiling water to become fork-tender. If you’re using baby potatoes, they may only require about 10 minutes, so keep a close eye on them — you don’t want to overcook them and end up with mushy potatoes.
  • How much potato salad per person? It’s safe to assume that 1 pound of potatoes will feed about 3-4 people. In this case, 2 pounds of potatoes for the potato salad yields about 6-8 servings. If you plan to feed 20 people, you will need to triple all of the ingredients. To feed 50 people, you will need about 8 batches for 100 people, about 15 batches…and so on.
  • Optional additions to the old-fashioned potato salad: Garnish the dish with any fresh herbs that you enjoy add a sprinkling of paprika just before serving stir in cooked, crumbled bacon add a few hard-boiled eggs include a dollop of mustard or stir in some pickle relish.     Sometimes things go wrong in the kitchen it happens!! If the Potato Salad went array, here are some fixes:

    Too Salty? To combat saltiness add a little more mayo until it is to your liking. If that doesnt do it you may need to boil an extra potato or egg to add in.

    Too Sweet? Some people prefer potato salad pretty sweet, but if it got a little too sweet for your taste buds just add a pinch of salt, a squirt of yellow mustard, and a dash of mayo. It should dilute the sweetness just enough.

    Too Dry? Sometimes the potatoes soak up more of the dressing than they should. I swear it depends on the weather. If it just needs a little more add a couple tablespoons of mayo. However if you need a lot more, whip up a half batch of the dressing and add as needed.

    Too Much Dressing? Add more filling boil a couple more potatoes and eggs.

    Potatoes overcooked? Make mashed potatoes or twice baked potato casserole instead!

    You can prepare and store this dish in an airtight container placed in the refrigerator for up to 2 days. Otherwise, you can freeze portions in a resealable plastic bag for up to 1 month. To do so, spread in a thin layer and remove all of the air, then seal. Defrost in the refrigerator a day before using. I like to chop some fresh onions and parsley to garnish on the top right before serving.

    Just like the potatoes, not all mayonnaise is created equal! Ive used Miracle whip, Kraft, Hellmans mayonnaise, but the one I prefer currently is canola oil mayonnaise, made by Spectrum.

    Place your eggs in a large pot and cover with cold water. Bring to a boil over medium-high heat.

    Then cover, and remove from heat. Set aside for 8-10 minutes. The eggs will continue cooking in the hot water even though they’re not over heat.

    Drain and cool in ice water. When the eggs are cool enough to handle, they’re ready to peel.

    • Can you freeze potato salad? Technically, yes. But I dont recommend it. Once thawed the potatoes get grainy and the dressing separates. We just prefer to make it fresh each time.

    We simmer potatoes whole in salted water when making potato salad. Here are our top tips for doing it:

    Salt the cooking water. Its important to add a generous amount of salt to the cooking water. By salting the water, the flavor of the potatoes comes out. They wont taste salty, only like excellent potatoes.

    Simmer, dont boil. When it comes to cooking potatoes for potato salad, theres no need to boil. When you do they violently bash against each other. Instead, bring the water with potatoes to a boil then reduce the heat to a gentle simmer. The potatoes cook just as quickly.

    Potatoes are cooked when you can push a fork through the center. When they are done, drain the potatoes and add them to an ice bath, which stops them from cooking. After 2 to 3 minutes they are cool enough to handle.

    While I love using skin-on potatoes for mashed potatoes, I like to remove the peel from the potatoes for this. Since I use small potatoes, peeling them before cooking would be a frustrating task.

    Instead, I cook my potatoes with the peel on, let them cool, and then peel. Since the potatoes are cooked, the peel comes off easily .
