Cook’s Tips And Recipe Variations:
- It’s important to put the potatoes in the pot of water before you heat up the water and bring it to a boil. This ensures even cooking. If you drop the potatoes into already boiling water, the outside of the potatoes will cook quickly, while the inside will stay hard.
- Boil the potatoes whole. Do NOT dice or peel the potatoes before they go in the water. Cutting or dicing the potatoes causes them to release steam while cooking, which will result in a mushier potato.
- The potatoes will take about 15-20 minutes in the boiling water to become fork-tender. If you’re using baby potatoes, they may only require about 10 minutes, so keep a close eye on them — you don’t want to overcook them and end up with mushy potatoes.
- How much potato salad per person? It’s safe to assume that 1 pound of potatoes will feed about 3-4 people. In this case, 2 pounds of potatoes for the potato salad yields about 6-8 servings. If you plan to feed 20 people, you will need to triple all of the ingredients. To feed 50 people, you will need about 8 batches for 100 people, about 15 batches…and so on.
- Optional additions to the old-fashioned potato salad: Garnish the dish with any fresh herbs that you enjoy add a sprinkling of paprika just before serving stir in cooked, crumbled bacon add a few hard-boiled eggs include a dollop of mustard or stir in some pickle relish. Take the basic recipe and make it your own!
How To Make Perfect Hard Boiled Eggs
Note: Start boiling eggs at the same time when boiling potatoes.
Take cold eggs out of the refrigerator and place them in an empty saucepan. Cover them with cold water. The eggs need to be covered by at least an inch of water.
Boil them for 5 minutes, turn off heat and let them sit in hot water for 10 more minutes. Remove, run them under cold tap water, peel and chop.
Meanwhile chop the pickles and fresh onion.

What Are The Best Potatoes To Use For Potato Salad
This is a common question and it can get a little overwhelming. Generally, the rule is that you want a more waxy potato and less of a starchy potato. Waxy potatoes will hold their shape better when boiled. They also commonly have thinner skin, so that means that you dont necessarily need to skin them before putting them in the Potato Salad. Some people like the taste of the skin and that more rustic look! A common potato that a lot of people use are the small Red Potatoes or even Yukon Gold. Try to avoid any potato that is more starchy with thick skins, like Russets.
Should You Cut The Potatoes Before Boiling Them
There are many different opinions on whether you should boil potatoes whole or cut them into cubes first. Honestly, I dont think it makes any difference. Personally, I cut them first and then boil because that way they cook and cool faster. But choose your preference the salad will taste the same either way.

What Is Potato Salad
Potato salad is a classic side dish that’s made with boiled potatoes and a variety of other ingredients. It’s believed to have originated in Germany, eventually making its way to other European countries and the European colonies.
A classic German potato salad is typically served warm or at room temperature and is dressed in a vinegar-based sauce. By contrast, American-style potato salad is often served cold or at room temperature, and is coated with a creamy dressing made from mayonnaise, sour cream, or yogurt. Most potato salad recipes include other seasonings, herbs, or vegetables in addition to the potatoes.
Spud Preparation And Cooking
Learning how to make potato salad is easy, but the cooking step is critical to the final texture. Peel and cut the potatoes into large pieces, ¾-inch dice. This size retains nice chunks when stirred and later eating. Cook the potatoes in salted, cold water. Bring water to a boil, and reduce to a simmer.
This process allows the flavor of the salt to be absorbed and gives an evenly cooked texture. However, dont overcook! They should be fork-tender but still hold together when pierced, so they dont fall apart entirely when mixed. I like to check every few minutes. It takes about 15 minutes to cook the potatoes.

What Kind Of Pickles To Use In The Traditional Southern Potato Salad
Dill pickles or sweet relish is what traditionally used for pickles in this salad. Some of us maybe fond of sweet pickle relish, others may prefer dill pickles instead.
I ferment my own dill pickles and thats what I used here. I find that the sour taste of a dill pickle compliments the richness of the mustard-mayonnaise dressing the best.
Troubleshooting Your Potato Salad
Sometimes things go wrong in the kitchen it happens!! If the Potato Salad went array, here are some fixes:
Too Salty? To combat saltiness add a little more mayo until it is to your liking. If that doesnt do it you may need to boil an extra potato or egg to add in.
Too Sweet? Some people prefer potato salad pretty sweet, but if it got a little too sweet for your taste buds just add a pinch of salt, a squirt of yellow mustard, and a dash of mayo. It should dilute the sweetness just enough.
Too Dry? Sometimes the potatoes soak up more of the dressing than they should. I swear it depends on the weather. If it just needs a little more add a couple tablespoons of mayo. However if you need a lot more, whip up a half batch of the dressing and add as needed.
Too Much Dressing? Add more filling boil a couple more potatoes and eggs.

Make It Ahead Of Time
You can prepare and store this dish in an airtight container placed in the refrigerator for up to 2 days. Otherwise, you can freeze portions in a resealable plastic bag for up to 1 month. To do so, spread in a thin layer and remove all of the air, then seal. Defrost in the refrigerator a day before using. I like to chop some fresh onions and parsley to garnish on the top right before serving.
What Kind Of Mayonnaise To Use In This Traditional Southern Potato Salad
Just like the potatoes, not all mayonnaise is created equal! Ive used Miracle whip, Kraft, Hellmans mayonnaise, but the one I prefer currently is canola oil mayonnaise, made by Spectrum.
This mayonnaise is thick, creamy and blends well. Never fails. But if anyone has any other preferences on which mayonnaise to use I would love to know and try other kinds!

How To Make Potato Salad
Making this traditional potato salad is simple and takes just a few steps, then it chills for a couple hours. Heres a summary of what to do:
Make Ahead And Storing Leftovers
- Make ahead: You can easily assemble this the day before serving. We like to prepare it the night before so its had time to chill and the flavors to blend, but still tastes fresh.
- How long does potato salad last? Potato salad with egg should be stored in an airtight container in the refrigerator and will keep for 3 days. Do not leave this salad out at room temperature or, worse, out in the sun. Mayo-based dressings do not do well in the heat.
- Can you freeze potato salad? Technically, yes. But I dont recommend it. Once thawed the potatoes get grainy and the dressing separates. We just prefer to make it fresh each time.

How To Make Potato Salad:
1. Boil the potatoes. Place the whole, unpeeled potatoes in a large pot of water. Bring the water to a boil, then simmer for 10 to 15 minutes. Peel potatoes, if desired, and cut them into 1 inch chunks.
2. Make the dressing. Add egg yolks, mayonnaise, buttermilk, mustard, a splash of pickle juice, and salt and pepper, to a bowl and mix together.
3. Mix dressing and potatoes.
4. Add egg whites, celery, onion, and pickles.
5. Stir well and refrigerate.
How To Cook The Potatoes
We simmer potatoes whole in salted water when making potato salad. Here are our top tips for doing it:
Salt the cooking water. Its important to add a generous amount of salt to the cooking water. By salting the water, the flavor of the potatoes comes out. They wont taste salty, only like excellent potatoes.
Simmer, dont boil. When it comes to cooking potatoes for potato salad, theres no need to boil. When you do they violently bash against each other. Instead, bring the water with potatoes to a boil then reduce the heat to a gentle simmer. The potatoes cook just as quickly.
Potatoes are cooked when you can push a fork through the center. When they are done, drain the potatoes and add them to an ice bath, which stops them from cooking. After 2 to 3 minutes they are cool enough to handle.
While I love using skin-on potatoes for mashed potatoes, I like to remove the peel from the potatoes for this. Since I use small potatoes, peeling them before cooking would be a frustrating task.
Instead, I cook my potatoes with the peel on, let them cool, and then peel. Since the potatoes are cooked, the peel comes off easily .
