There are generally three parts to a basic chicken salad

  • Chicken precooked and could be shredded or chopped. You could even use canned or a rotisserie chicken.
  • Dressing sometimes just mayo, but could be yogurt and have other things like mustard, herbs/spices, and sometimes even a sweetener like honey, sugar, or maple syrup.
  • Mix-ins some popular things to add are chopped nuts , grapes, cranberries, cheese, apple, veggies , and even raisins. Have even heard people using blueberries, broccoli, and anything else they have around!

Apple Salad Dressing & Cheddar

Now, I know that most people are accustomed to making apple salad with mayo. While I know how delicious that version tastes, I wanted to make it somewhat healthier so I swapped some of the mayo with yogurt.

The fat content that came from 2 tablespoons of mayonnaise mixed in with ½ cup of Greek yogurt eliminated the need to add in any oil into the recipe. And a generous squeeze of lemon seasoned with salt and pepper gave me the easiest yet the most delicious apple salad dressing.

Prefer an apple salad without mayo? No problem. Simply follow the exact apple salad dressing recipe below, but swap mayo with 2 tablespoons of olive oil. Give it a taste. If it is not as flavorful as you want, you can add in a clove of minced garlic as well.

Whatever you do, do yourself a favor and ditch the store-bought salad dressings because as you can see below you could easily create a delicious yogurt-based vinaigrette recipe in no time.

Initially, I had no intention of adding any type of cheese into this apple salad recipe. However, even with the addition of yogurt , mayonnaise , lemon juice , and a generous amount of salt and pepper, once the sliced apples were mixed in with the rest of the ingredients , it was just not complete.

Ingredients For Waldorf Salad

  • Mayonnaise You can substitute sour cream or plain yogurt if you prefer.
  • Lemon juice This not only adds a little citrus zest to your dish, but also helps keep your apples from browning.
  • Salt We use Kosher salt for this recipe.
  • Apples The crisper the better. We prefer red-skinned apples but you could mix in Granny Smith if you like something a little less sweet.
  • Celery Fresh celery adds to the crunch factor.
  • Red grapes These add just enough sweet to counterbalance the tart apples.
  • Walnuts These give your salad a great texture and crunch.
  • Lettuce We like to use a nice spring mix or some bright butter lettuce leaves to create an eye pleasing presentation.

Dressing For Waldorf Salad

For our dressing, we use mayonnaise as a base and add lemon juice to help keep the apples from browning so quickly, and salt to add some additional flavor.

Traditional dressings for the Waldorf salad use mayonnaise but if you would like to cut the fat feel free to substitute sour cream or plain Greek yogurt.

Yes! Raw broccoli tastes great in this salad. If you find that its too tough to chew, youre serving it to small children or you dont like the taste of raw broccoli, you can also blanch it first.

To blanch the broccoli: Boil some water in a large pot. Add the broccoli and cook for one minute. Immediately drain the broccoli and place into a bowl of ice water to stop the cooking process. This will help the broccoli to stay crisp and retain its vibrant green hue.

Low Carbers Can Also Use Low Carb Apple Substitutes If They Like Them

For example, some people like to use zucchini or jicama. Ive heard the jicama takes on the sweetness of other ingredients and is a good trade out for apples. Maybe give it a try? Firstly, Waldorf salad is best served chilled. A warm Waldorf salad wont taste great and may not even be very safe to eat since the dressing is mayo-based.

I like to serve it on a bed of butter lettuce or peppery delicious arugula, but its also great with fresh-baked bread, dinner rolls, or even wrapped in a tortilla for an easy, on-the-go lunch or dinner recipe.

My very favorite thing about salads is how simple they are. This cucumber apple salad requires almost no thought, no time, and no hassle. What a winning recipe! All you have to do is chop up the cucumbers, radishes, and apples, and mix them together. Then make the cucumber salad dressing by mixing the mayonnaise, apple cider vinegar, lemon juice, and parsley. Lastly, toss the veggies with the dressing, and let it sit in the refrigerate to get cool and crisp before serving.

Crisp apples are the most important ingredient in this salad! I like using two different varieties of apples when I make it. I prefer a Granny Smith apple and a red-skinned apple, but if they arent in season I will use whatever apples I can find that are crisp. Honey Crisp, Gala, Fuji, Sweet Tango and Pink Lady apples are some of my favorite, but you can use any apples you have on hand.

Can you freeze chicken salad?No, I do not recommend freezing this chicken salad. I mean technically you can freeze it, but you will probably be disappointed with how it turns out after thawed.

How long does chicken salad last?As I mentioned above, I think this chicken salad is best served right away or within a few hours but can last a few days in an airtight container in the refrigerator for a few days. The longer you store it, the softer the apples and nuts will get.

What can I substitute for the mayo?For a no mayo chicken salad, you could substitute plain Greek yogurt or even Miracle Whip if thats more your thing.

What can I substitute for the nuts?You can substitute any type of nuts for the walnuts, but if you dont want any nuts you can omit them entirely or chopped celery would be a nice crunchy alternative.

    Im sharing this Honeycrisp apple salad recipe today in honor of my mom. When my mom was cooking for our family of six, she made this quite a bit, and it was always a treat. As some of you may remember, my mom was diagnosed with dementia in 2009, and passed away in 2016. When she first began showing signs of her illness, my dad began to spend time in the kitchen with her, and she taught him how to make some of their favorite dishes. Over the years since then, he has simplified many of the recipes to make things easier, as is the case with this apple salad. This Honeycrisp apple salad is actually my dads version, and it has such a fresh taste. I tend to make more apple recipes in the fall, but not this one.     • Shredded carrot: Adds a nice crunch and pop of colour to the salad. You can also finely dice the carrot instead of shredding it if preferred.
    • Red onion: The onion helps to balance out the sweetness in the salad and adds some additional colour and texture. Use finely diced red onion or sub in sweet onion if preferred.
    • Dried cranberries: Adds a burst of sweetness and touch of chewiness to every bite. Look for the dried cranberries sweetened with apple juice if possible to help reduce added sugar. You can also sub in raisins if desired.
    • Sunflower seeds: Incorporates a nice crunch and some extra healthy fats and protein. You can also use pumpkin seeds or sliced or slivered almonds.

    How To Make Waldorf Salad With Apples Celery And Walnuts

    Before making the actual salad, lets make the dressing first. Whisk together the mayo, sugar, and half of the lemon juice in a medium mixing bowl and set aside.

    Dice the apples so they are in bite-sized pieces and add to a large mixing bowl. Toss with the remaining lemon juice to keep from browning.

    Halve all of your grapes and add them to the bowl of apples. Next add the chopped walnuts and celery.

    Add the dressing and gently stir until the fruits and nuts are evenly covered.

    Cover the bowl, and place it in the fridge to chill for at least 1 hour or until you are ready to serve.
