How To Store Greek Yogurt Marinated Chicken

You can make the marinade ahead of time and store in an airtight container in the fridge for up to 3 days.

I actually would recommend that you prep this marinade a day in advance. The flavours really come together the longer the marinade sits. I like to store it in a mason jar so I just give it a good shake and pour it out over my chicken when I am ready to let the chicken start to marinate.

The cooked chicken can be stored in an airtight container in the fridge for up to 3-4 days. Allow the chicken to cool completely before storing.

Blender If you want a smoother, well blended marinade. A whisk and some elbow grease can work wonders though.

Healthy Chicken Salad With Greek Yogurt

If you are looking for an easy no mayo chicken salad recipe, look no further! The secret to the creamy texture is a mix of greek yogurt and a little dijon mustard. I used my stove top shredded chicken recipe for this salad. Feel free to substitute grilled chicken or rotisserie chicken if you have either of those on hand.

How To Make A Buffalo Chicken Salad With A Greek Yogurt Ranch Dressing

Step 1: Season and saute buffalo chicken

To begin, slice chicken breast into thin small strips. Then, toss chicken in salt, pepper, garlic powder, and smoked paprika. Heat oil over medium heat.

When the oil is hot, add the chicken to the pan. Saute chicken for 7 minutes tossing frequently.

While the chicken cooks, melt butter and hot sauce together. Add butter and hot sauce mixture to the pan after 7 minutes and cook for another 2 minutes. Remove the chicken from the heat.

Step 2: Chop veggies and prepare ranch dressing

While the chicken cools, prepare the Greek yogurt ranch dressing by mixing the yogurt, mayo, lemon juice, onion powder, garlic powder, dried dill and dried parsley in a small bowl until a smooth, even mixture remains.

Then, chop romaine into thin shreds and cube celery, cucumber, and avocado.

Step 3: Assemble salads

To prepare the salads, plate the romaine with the buffalo chicken, cucumber, celery, and avocado. Top with chopped scallions and the ranch dressing.

How To Make Greek Yogurt Marinated Chicken

Yields: 6-8 Servings | Prep time: 15 mins | Cook time: 18 Mins

Ingredients:

1 cup plain Greek yogurt2 lemons, zested and juiced4-6 cloves garlic, mincedSalt & black pepper, to taste

Directions:

Add the Greek yogurt, lemon juice, lemon zest, garlic, oil, and oregano to a large bowl. Season with salt and pepper to taste, and stir until well mixed.

Reserve 2/3 of the marinade, set aside in a small bowl for basting.

Add chicken to Greek yogurt mixture and stir until thoroughly coated. Marinate in the refrigerator for at least 20 minutes or up to 2 hours.

To Grill:

Prepare the grill by lightly oiling the grate with vegetable oil and set to medium-high heat .

Place chicken on the pre-heated grill. Discard used marinade.

Cook the chicken for 8-9 minutes on one side, then turn and cook for another 8-9 minutes, or until chicken reaches an internal temperature of 165 degrees. Baste as necessary with the reserved marinade.

Allow the chicken to rest for 10 minutes before slicing to serve.

To Bake:

Preheat oven to 400 degrees F.

Place marinated chicken in a baking dish and bake for 18-20 minutes.

This recipe includes all the typical things you find in chicken salad, but with Greek yogurt instead of the mayo! Heres what you need:

  • shredded chicken use rotisserie chicken for a shortcut here or use my foolproof method for slow cooker shredded chicken.
  • grapes I love using fresh grapes, but you could also substitute for raisins or even dried cranberries
  • celery and red onion these add a nice crunch to the salad
  • plain Greek yogurt you can use whatever fat level you like for the yogurt. I buy full-fat for my daughter so thats typically what I use. If youre dairy-free, feel free to use dairy free yogurt as a sub.
  • salted almonds you can swap for a different nut if you dont like almonds or have an allergy.
  • dijon mustard
  • fresh parsley if youve never added fresh herbs to your chicken salad youre missing out! I love fresh parsley, but fresh dill is also amazing!

Up until now, I havent shared a lot of salad recipes like this light chicken salad recipe. The reason is that John has a major aversion to mayonnaise.

I grew up eating chicken salad sandwiches, ham salad, and egg salad, but once I married his highness I thought those days were over.

I bought a large package of boneless-skinless chicken breasts when they were on sale. Usually, Ill do this and put them in smaller packages before freezing them but didnt get that done this time. So, when I thawed them we grilled up the entire package with just a little olive oil, salt, and pepper.

We had a delicious chicken dinner but I had to get strategic using the rest of the leftovers. This Chicken salad no mayo recipe was a great choice!

Im really picky about chicken salad for some reason. It has to have distinct flavors and maybe thats why I like Chicken Salad with Yogurt. The thyme is a great contrast to the sweetness of the Craisins .

The texture is a thing with me too. Some salads are really kind of mushy. This no mayo chicken salad uses diced chicken, crunchy celery, walnuts, and fresh green onion and just enough yogurt to tie it all together. Not bathe in it.

This chicken salad is SO versatile. You can easily customize it with whatever you like/dont like or have on hand. Here are some ideas for you:

Chicken You can sub chicken for tuna if youd like. We also have a Greek Yogurt Tuna Salad recipeI have not tried canned chicken in this recipe but I think it would work.

Yogurt I like to use plain, unflavored, non-fat greek yogurt in this recipe. You can use 1%, 2%, or full fat yogurt if you like. We dont recommend using a flavored/sweetened yogurt in this recipe.

Parsley- If you dont have fresh parsley, you can sub with 1/4 the amount of dried parsley. If you dont have or like parsley you can substitute with some fresh dill, thyme or even basil!

Dairy Free I have not tried this with dairy free yogurt, but I think it would work. Make sure that your yogurt is unsweetened, plan yogurt.

Grilled Chicken This salad is great with leftover grilled chicken. We love it with this balsamic chicken!Fruit- You can omit the fruit if youd like to. Apples can also be subbed for grapes or berries. If youre going to use a dried fruit like raisins or cranberries Id recommend cutting the amount in half.

Celery If you dont like or dont have celery omit it.

Weight Watchers The only points in this recipe for the blue plan come from the pecans. You can omit them or cut back on the amount to save points

Keto If you are following a strict keto diet its best to omit the apples from this recipe.

Make Chicken Salad With Leftover Chicken

Like most chicken salad recipes, using leftover chicken makes this come together quick and easy. Luckily, I have a local market that makes some of the best rotisserie chicken in the area. Its a great way to make this a rotisserie chicken salad with Greek yogurt in under 30 minutes.

When I have time, I usually roast 2 or 3 split chicken breasts and use them in this salad. I like breast meat because it is easy to flavor and low in calorie compared to other parts of chicken. If you need a foolproof recipe, be sure to try my Oven-Baked Bone-In Chicken Breast recipe.

With that being said, you can use an equal amount of roasted chicken thighs as well.

PRO TIP: For this recipe, I purchase about 3 large rotisserie chicken breasts, since one breast will give you roughly 1 cup of cubed chicken. If you dont mind a mix of light and dark meat in your salad, 1 whole rotisserie chicken will yield about 5-6 cups cubed chicken. You can either double the recipe or use the other half for another use.

  • Make it vegetarian: if you want to keep the recipe vegetarian you can swap the chicken for chickpeas or even cubed tofu.
  • Make it dairy free: simply use your favorite plain, dairy free greek yogurt.
  • Use mayo: if you are a big mayo lover , no shame! Feel free to use it in place of the greek yogurt, or do half and half.
  • Choose your mix-ins: feel free to also use toasted, sliced almonds, dried cranberries or raisins.

½ cup pecans or walnuts, coarsely chopped

½ cup FAGE Total 5%

2 tablespoons milk or water

1 ½ tablespoons Dijon mustard

1 lemon, juiced

2 cups cooked chicken, diced

½ cup green seedless grapes, cut in half

½ cup red seedless grapes, cut in half

¼ cup parsley, coarsely chopped

½ teaspoon salt

Multigrain or bread of your choice, sliced and toasted
