Best Macaroni Salad Ever – How to Make Deli-Style Macaroni Salad

For creamy macaroni salad, we love using a slightly adapted version of our potato salad dressing . Instead of just using mayonnaise, which can make the pasta heavy, we combine mayonnaise with sour cream.

Since the sour cream has a bit of tanginess, it lifts the flavors of the dressing, just as fresh lemon juice would to other dishes.

In addition to the mayonnaise and sour cream, we use these ingredients:

  • Yellow mustard adds a bit of color and rounds out the flavor of the dressing nicely. We usually use Dijon mustard in our recipes, but just like when making our potato salad, we prefer regular yellow mustard for the best pasta salad.
  • Apple cider vinegar adds even more flavor to the dressing. Just a tablespoon will do it. If you dont have apple cider vinegar, most kinds of vinegar will do, especially white or red wine vinegar.
  • Salt and pepper are a must when it comes to making the dressing. Theres a lot of pasta and vegetables going into the bowl. Nobody wants an unseasoned salad, right? We start with a 1/2 teaspoon of fine sea salt and go from there based on taste.
  • Honey is an optional ingredient. We typically stay away from sweeter pasta salads, but if thats what you love, add a tablespoon or so of honey to the dressing, and youll be a happy camper!

This is quite the cunning macaroni salad. On the surface, it doesn’t look much different than its deli-bought counterpartsit’s macaroni in a white, creamy saucebut one taste tells a completely different story. For one thing, it’s got a whole lot of tang going on, thanks in no small part to that early introduction of vinegar.

The other additions to the dressing add a subtle depth that the standard macaroni salad just doesn’t have. The mustard’s the most prevalent, with its slightly pungent bite, but the Worcestershire and hot sauce come through in moderation, too. Finally, the veggies all hold up nicely over time, maintaining their crispness and holding onto their unique, fresh flavors. This may not be the most revolutionary, fancy-pants pasta salad, but it delivers on everything a great macaroni salad should, and then some.

When it comes to making a cold, creamy pasta salad, keep these tips in mind:

  • Dont overcook the pasta. Use the package directions of the pasta you choose as a guide, but a minute or two before it should be done, test it. If done, drain the pasta and move onto our next tip.
  • Rinse the cooked pasta under cold water before tossing with the salad dressing. If youve ever made pasta salad that turned sticky, not rinsing the pasta before tossing with the dressing could be the reason. The cooked pasta is coated in starches. By removing the starches, the salad wont turn sticky or clump as much.
  • Choose lots of colorful veggies and textures to add to the salad. Its just better this way.
  • Use a bright and flavorful salad dressing. Since the base of our dressing is creamy, we love brightening it up with some acid from vinegar and mustard. If you love sweeter salads, you can add a bit of honey, as well.

Serving & Preparing In Advance

Corn salad can be served immediately after mixing all of your ingredients/dressing together, but, if you can, I recommend covering it and placing in the refrigerator for at least an hour to give the flavors the chance to really meld together.

This recipe can be made up to a day in advance of serving. I dont like to make it much before that because if your avocado is particularly ripe it can begin to turn brown if allowed to sit for too long .

Always make sure to give your ingredients a good stir before serving, as the dressing has a tendency to settle to the bottom of the bowl.

If taking your macaroni salad to a potluck or BBQ, make sure to not let it sit out at room temperature for more than two hours.

Pickle juice is the secret! The dressing for this salad is a mayonnaise base thats been thinned out with pickle juice reserved from the sweet pickles added to the salad. I always use sweet pickles, so if you use another style, taste test it to your liking. If youre not a fan of pickles, you could substitute vinegar or lemon juice. Taste as you go to get the right balance. But for me, its sweet pickle juice all the way.

Refrigerate for the flavors to meld. This salad tastes best when its had some time in the refrigerator for the flavors to meld and the mayo sauce to permeate the noodles. Allow for at least an hour of chill time before serving, or make it the night before for the best, flavorful taste. And always remember to taste again before serving to decide if more salt and pepper seasoning needs to be added.

  • Scallion is diced and added to provide a sweet onion flavor without being too strong. Dice up both the white and light green parts.
