If using rotisserie chicken, simply pull the meat from the bone, remove the skin, and give the meat a rough chop. Youll need about 3 cups of chopped chicken for this recipe. You can also use canned chicken breast, if needed, although that option will have the least desirable texture and flavor of the three options.

Pickle Substitutes To Use In Chicken Salad

If you don’t have any pickles on hand but still want to add some extra zesty flavor to your chicken salad, there are a couple of alternatives. Pickle juice adds both tanginess and saltiness to your recipe. Ingredients like green olives and capers are also packed in a vinegary, salty brine that could be used instead of pickle juice if you don’t have any on hand, and pepperoncini brine could be used if you want to add a spicy kick .

If you don’t have any of those, either, you might be able to get away with just adding a squeeze of lemon juice or a splash of vinegar to the chicken salad. It will add a much-needed acidity to the recipe, and while neither are as flavorful as pickle brine, which is usually infused with spices, it’s still better than nothing at all.

Trust us once you’ve added pickle juice to your chicken salad, there’s no going back to the bland and boring stuff.

How Much Chicken Do You Need

    Simple Chicken Salad

However you prepare the chicken salad, more than 50% of the salad should constitute chicken. In this regard, you will only require two ounces of chicken to prepare per serving.

When you are preparing the salad as a main course, you should use about 50-60 grams of chicken alone for the meal. The key ingredient here is the chicken. So, use a generous quantity of it. Best of all, use chicken breasts for this purpose.

But if you are preparing for a group, dont use too much chicken as it can take a toll on your budget. The amount per serving here will also reduce, and so should the amount of chicken. Use other budget-friendly toppings to fill in for chicken. However, please do not use too little of it, or you may ruin the entire purpose of chicken salad!

How To Cook Chicken For Chicken Salad

If you are going to cook chicken specifically for chicken salad, the easiest thing to do is to poach it.

What I like to do is put a pot of 2 quarts of water and 1 tablespoon salt on to boil. As the water is heating, I cut skinless boneless chicken breasts into large chunks. When the water boils, I add the chicken, and return the pot to a simmer. Then I turn off the heat, and cover the pot and let the meat sit for 15 minutes in the hot water while I prepare everything else. Poaching chicken this way allows the chicken to cook gently, so the chicken retains more moisture.

After the chicken is finished cooking you can save the poaching liquid as light chicken broth.

Poaching aside, you can easily use any cooked chicken for this chicken saladrotisserie chicken, grilled chicken, or roasted chicken. My parents will often use leftovers from their favorite baked chicken, and even include some of the crispy skin in the salad.

How To Spice Up Your Chicken Salad

Chicken salad is a lunchbox staple, a faithful companion on picnics, and a good way to ease into the transition from summer to fall. Chicken salad is the answer to packing a sandwich on days where something on the stove feels too ambitious. Its fast, its filling, and it can be packed with flavor.

The quintessential version has shredded chicken, mayonnaise, maybe some mustard or lemon juice, celery, dill, and maybe some parsley too. Thats the classic. But its far from the only way to make a chicken salad, and if youre feeling in a little bit of a sandwich rut, you should get creative.

The main components of the chicken salad are chicken, of course, some kind of creamy binder or dressing, some kind of crunchy component, and spices or herbs. Some acid in there often provides a pleasant contrast, too. And if you like a little pop of sweetness, sliced fruit, like grapes or tomatoes, goes well with the mixture too. But really, those three components are what you need. Once you understand the template, you can do some experimenting to take chicken salad into a whole new world of lunching.
