Quinoa contains more protein than most grains. And its gluten-free.

Its also rich in antioxidants and bone-building minerals. However, quinoa can be pretty bland on its own.

But theres nothing bland about this Quinoa Black Bean Salad. Thats because the quinoa soaks up the tangy, spiciness of the salad dressing.

And its tossed with black beans and veggies. These veggies include cucumbers, bell peppers, carrots, and green onions.

So youre getting lots of natural sweetness and freshness too.

Sorry Ive been MIA from the blog, but Ive been trying to focus my efforts full-time on my job search. Yes, Im officially out there trying to get back into the working world. Chickpeas are a cheap source of plant-based protein. Just one cup of cooked chickpeas provides almost a third of your daily protein needs.

Its also rich in magnesium, phosphorus, and manganese, which you need for healthy bones. So, eat up those chickpeas.

I like to hold off on dressing my salads until right before it is time to eat. My favorite dressing to use on a cobb is a lemon-herb tahini dressing because it has a similar tangy flavor to blue cheese which is traditionally used on cobb salads. Another great salad dressing option is this jalapeño ranch that is also completely dairy-free!

Easy Detox Salad In A Jar

I love meat, as Im sure many of you do too. But once in a while, its a good idea to detox by just eating plants.

This easy detox salad doesnt have an ounce of meat. All it contains are veggies, legumes, nuts, and seeds with tons of health benefits.

Like cucumbers, onions, broccoli, cabbage, carrots, spinach, and chickpeas. Its a powerhouse of nutrition.

And for crunch and extra protein, you add some almonds and pumpkin seeds.

The homemade salad dressing is equally as nutritious. You have your heart-healthy fats from the olive oil, Vitamin C from the lemon, and antioxidants from the garlic.

Whats more, this salad takes only 10 minutes to make. So, its great for those times when youre short on time.

Day 8 Roasted Brussels Sprouts & Tofu Salad

Roasted Brussels sprouts and crispy pan-seared tofu with agave-sesame glaze, on a bed of juicy baby spinach & butter lettuce.

While this recipe does require making several components, everything comes together so well and youd be left wanting for more.

Recipe for the Roasted Brussels Sprouts Trim off the nubby ends and slice each sprout in half from the flat base through to the top. In a large bowl, combine the halved sprouts, 1/2 tbs olive oil, and salt to taste. Toss well. Then arrange the sprouts in a baking sheet, in an even layer with the flat sides facing down. you can also pan-roast the sprouts in a similar way until they are tender and deeply golden on the edges. If using an oven then roast them for 20-25 minutes at 425 F. You could garnish this with parmesan shavings if you like.

Recipe for the Tofu with Agave-sesame glaze Heat a pan with 1/2 tbs olive oil and toss in the cubed tofu until its roasted on both sides. You can find tips for preparing the Tofu here. Next, whisk together the vinegar & agave in a small bowl. Add in the ginger and chilly flakes and gently pour everything over the roasted tofu. Let it all come to a light simmer for about 3-4 minutes. Sprinkle with sesame seeds & season lightly with salt.

And we topped it with some English cucumbers, and cranberries soaked in red wine. Because delicious & boozy is allowed on weekday lunches right? Just soak the cranberries in wine until all the liquid is absorbed and the berries puff up. That simple.
