If youve made homemade mayonnaise before, you know how to make Caesar dressing. The process is the same . If you havent, its a great day to learn a new cooking skill!

The process is LIKE making mayo, but this homemade Caesar doesnt actually have mayonnaise in it.

It does have raw egg, though. Its important to use the freshest eggs from the healthiest chickens when using raw eggs in recipes. Our eggs come from about 30 feet out our door .

Nobody said your eggs have to be THAT fresh, just do your best to find the freshest eggs you can.

Anchovies In Caesar Dressing

Theres debate about whether anchovies were traditionally in Caesar salad or not. I used to be a bit squeamish around the thought of anchovies in my salad dressing, but it adds so much flavor to the dressing, its so worth it.

Plus, when you use this anchovy paste, its way easier. The only ingredients are anchovies, olive oil, and salt. Perfect!

Ever heard of umami? Its that savory flavor that makes food taste oh-so-good. Anchovies bring the umami to the dressing.

What Is In A Caesar Salad

The traditional Caesar salad dressing calls for raw egg yolks, but thats just not really my thing, so I prefer to just use mayonnaise because it still contains egg yolks and the oil needed but the egg yolks are pasteurized. So you still get a rich and creamy Caesar salad dressing without using raw eggs.

For the base of the salad, I like to use Romaine hearts because they are crisper than the outer leaves on a head of Romaine lettuce. But if a head of romaine is what youve got, feel free to use that. Then of course, those homemade croutons are a must. They really turn a good salad into an incredible salad.

Also a must are the anchovies. I used to try to avoid using them, but really they are a game changer. Those tiny little things really pack a flavorful punch, so just pinch your nose and get smashing .

    INGREDIENTS

    • 2 heads of romaine lettuce, washed and dried

    • 1/2 freshly grated Parmesan cheese

    • 1/2 cup extra-virgin olive oil

    2. Chop or tear romaine into bite-sized pieces and place in a large serving bowl.

    4. Put olive oil, mayonnaise, egg, garlic, salt, pepper and dry mustard into a small bowl. I use Hellmans Real Mayonnaise, which has zero carbs and sugar. Blend using as immersion blender. Drizzle over salad, toss and serve.

    This makes a LOT of salad because we eat it as our meal. But you could prepare a smaller version and refrigerate the extra dressing to use the next day.
