If you have never experienced the show that goes with the table side presentation, you do not know what you have missed. History: Caesar Salad is named after chef Caesar Cardini who created it in his restaurant in Tijuana, Mexico in 1924. It became popular in Hollywood and is now considered an American classic. The salad consists of greens with a garlic vinaigrette dressing.

In the 1930s, Caesar Salad was voted by the master chefs of the International Society of Epicures in Paris as the greatest recipe to originate from the Americas in fifty years. In the 1970s, Cardinis daughter said that the original recipe included whole lettuce leaves, which were meant to be lifted by the stem and eaten with the fingers coddled eggs and Italian olive oil. Begin by whisking together the garlic, anchovy paste, lemon juice, Dijon mustard, and Worcestershire sauce. Next, whisk in the mayonnaise, Parmigiano-Reggiano, salt, and pepper. Thats all there is to it.

First, youll preheat the oven to 375 degrees F. Cut bakery bread into slices then tear bread into 3/4-inch pieces and place close together on baking sheet. Drizzle slowly and evenly with olive oil, then toss and spread out on baking sheet.

Bake in preheated oven until golden brown and crisp, about 15 18 minutes, tossing once halfway through. Let cool.

    The reason for this is that both salt and lemon juice will break down the egg. And when that happens the dressing wont be as thick and creamy. Or in the worst case scenario it wont emulsify if they sit together too long before blending in the olive oil.

    Romaine is always a the best and classic choice for a Caesar. But if you want to mix things up a bit, go ahead and grill your romaine for another fun variation.
