Classic Caesar Salad My All

If you have never experienced the show that goes with the table side presentation, you do not know what you have missed. What an opportunity for a waiter to show off his stuff, mixing and whisking to the delight of the patrons.
History: Caesar Salad is named after chef Caesar Cardini who created it in his restaurant in Tijuana, Mexico in 1924. It became popular in Hollywood and is now considered an American classic. The salad consists of greens with a garlic vinaigrette dressing.
In the 1930s, Caesar Salad was voted by the master chefs of the International Society of Epicures in Paris as the greatest recipe to originate from the Americas in fifty years. In the 1970s, Cardinis daughter said that the original recipe included whole lettuce leaves, which were meant to be lifted by the stem and eaten with the fingers coddled eggs and Italian olive oil. How To Make The Best Garlic Croutons
Making garlic croutons seems super easyjust toss some bread cubes with minced garlic and oil, then bake them until crisp and light brown, right? Yes. Except: Garlic browns faster than bread, so if you do this, you’ll end up with bits of dark garlic on otherwise perfect croutons. Here’s where a bit of Julia’s genius from the original recipe comes into play. Rather than tossing the bread with straight-up garlic, mix the garlic with olive oil, then press it out through a fine-mesh strainer. The olive oil becomes infused with garlic flavor, which then gets transferred to the croutons.
All the garlic, none of the burning. The pressed garlic can then be reused in the dressing, making it a no-waste endeavor.

For added flavor, I also like to toss the bread with some of the Parmesan cheese before toasting. It’s a trick that I often employ with pizza, adding some cheese before baking and a fresh sprinkle after the croutons come out of the oven, giving you the nuttiness of cooked Parm with the sharp bite of freshly grated.

What Makes Caesar Dressing So Creamy
Traditionally, the dressing gets its creaminess not from any cream, but from egg yolks, which get combined and emulsified with mustard and oil.
The use of raw egg yolks in traditional Caesar dressing can be a concern when it comes to food safety. Thats why youll find many modern versions dont use them at all.
Raw eggs can contain salmonella, a bacteria that can be on the shell or inside of the egg that can make you sick.
If you want to make Caesar dressing with raw eggs but avoid this foodborne illness, its best to keep eggs refrigerated at 40°F and to cook them until the whites and yolk are fully set. That happens when they reach about 160°F .
Many of todays commercially-available Caesar dressings use plain yogurt, kefir, or buttermilk to create the classic creaminess. Some versions add other emulsifiers, such as xanthan gum, to keep the dressing from separating.
The creaminess in Caesar salad dressing comes from egg yolks emulsified with mustard and oil. To avoid salmonella concerns from raw eggs, some variations instead incorporate yogurt, kefir, or buttermilk for the same creamy texture.
Choosing a Caesar salad can be a filling way to get some extra vegetables into your day.

What Is In Caesar Salad
Classic Caesar Salad is made with romaine lettuce, Parmesan cheese, croutons, and a rich, creamy dressing. The dressing is so unique that it has its own name Caesar Salad Dressing, apart from the salad itself. Traditionally, raw eggs and anchovies are used in the dressing, which gives the salad its trademark taste. Of course there are so many variations on this salad today, including ours.
We nixed the raw eggs and use mayonnaise instead, which is made with pasteurized eggs and still keeps the dressing luscious and creamy. While bacon is a staple in our house, I often make this salad without it Toasty homemade croutons, hearts of romaine, and freshly shaved Parmesan are a must.

And now on to the dressing, aka the best part. This isnt the most traditional dressing out there. But I think youll be won over by its incredible creaminess and depth of flavor.
It comes together quickly in the blender. The only tip I have here to make it fool proof, is to make sure you dont put the salt or lemon juice into the blender, until you know youre ready to blend within 5 minutes.
The reason for this is that both salt and lemon juice will break down the egg. And when that happens the dressing wont be as thick and creamy. Or in the worst case scenario it wont emulsify if they sit together too long before blending in the olive oil.
Romaine is always a the best and classic choice for a Caesar. But if you want to mix things up a bit, go ahead and grill your romaine for another fun variation.
